At the Toronto Packing Plant, processing begins with the Haith vegetable polisher, the latest in washing technology designed to remove soil and any potential contaminants.  This advanced technology cleans and polishes potatoes to a quality that is far superior to regular washers ensuring that MacKay and Hughes always has exceptional products for its customers.

Potatoes move from the washer through the automatic air dryers, to three different packing lines. Each packing line has separate grading tables where inspectors hand-inspect and remove any product that does not meet the company’s high standards of quality. A full time inspector randomly inspects the product as it comes off the line to ensure that these standards are always met. From there the potatoes move to separate evenflow hoppers, before being elevated into the high speed computerized bagging systems.

The Volm 12000 high volume packer, packs potatoes efficiently at high-speed and with great accuracy.  This state-of-the-art system offers computerized sizing and weighing, and finishes the product with a 10lb paper bagger or a high-speed poly-bagger. 

The Triangle form-fill-n-seal bagger packs mini potatoes into small 24oz bags. The mini potato market is becoming one of the fastest growing segments in the industry and this machine allows MacKay and Hughes to showcase these delicate and tasty potatoes in a high graphic, pillow pack bag.

The high-grade line allows MacKay and Hughes to pregrade expensive California white, red and yellow potatoes. During the winter months, cooler temperatures can crack the new crop potatoes during harvest in California and Florida. The Company removes the cracks, and blemishes, before the product gets to the bulk displays in major retail stores. This service greatly reduces the shrink experienced at store level, and reduces the labour for the store managers.

The high-speed foil wrapping line rounds out the grading and packing area.  To ensure that these potatoes are the best quality for baking, this line double washes, before grading and hand-wrapping each and every potato.  A second team finalizes the packing process by inspecting the foil wrap on each potato and packaging the product in convenient, shrink-wrapped trays.
