Full of fresh flavours, this healthy harvest potato salad recipe is a must try. Simply prepare the salad while EarthFresh Red Yukon Potatoes and butternut squash are in the oven roasting. This recipe is high in potassium, a good source of vitamin C, low in fat, and a great source of the daily nutrients/ vegetable intake.


  • 5 EarthFresh Red Yukon Potatoes, chopped
  • 1 butternut squash, peeled and chopped
  • 2 cuillères à soupe d'huile d'olive, réserver la moitié
  • ½ tsp nutmeg
  • ½ c. à thé de sel
  • 1 cuillère à soupe de vinaigre de cidre de pomme
  • ½ tsp sugar
  • 1 cuillère à soupe de moutarde de Dijon
  • 1 cuillère à soupe de miel
  • 1 bunch kale, chopped and stems removed
  • ¼ tasse de fromage feta, émietté
  • 2 tbsp salted pumpkin seeds


Préchauffer le four à 400 ° F (200 ° C).

Add potatoes and butternut squash to a roasting pan. Toss with 1 tbsp olive oil, nutmeg and salt. Roast for 40-45 minutes, flipping halfway through. Remove from oven and allow to cool slightly for 10-15 minutes.

In a small bowl, whisk together remaining olive oil, vinegar, sugar, mustard and honey.

Transfer roasted squash and potatoes to a large bowl and add kale.  Add dressing and gently mix. Top with crumbled feta and pumpkin seeds. Serve warm or cool.
