Wash and dry potatoes, then cut into halves. Place into a large pot of cold, salted water and bring to a boil. Reduce heat and cook potatoes until tender, but still firm, about 7-10 minutes. Remove from heat, drain and transfer to a medium bowl.
In a small bowl, whisk together oil, vinegar, orange juice, honey, mint, orange zest and cranberries. Pour over potatoes and toss to coat evenly. Transfer to a serving bowl and serve immediately. Enjoy!
