Apple, Cheddar, and Potato Breakfast Skillet

Ingredients

2 lbs Butter Red potatoes, diced

½ package breakfast sausage, diced (can substitute bacon)

2 Tbsp olive oil

1 small yellow onion, diced

1 medium apple (Honeycrisp, Gala, or Pink Lady), diced

1–2 tsp fresh thyme

1 tsp cinnamon

1 cup shredded sharp cheddar

Salt and pepper to taste

Directions

Preheat oven to 400 degrees.

Place sausage in a large skillet over medium heat. Cook sausage until crisp and browned. Remove to a plate.

Add potatoes to the skillet with 2 tbsp oil. Season with salt, pepper, and thyme. Cook on medium-high for 12–15 minutes, stirring occasionally, until the potatoes are golden and soft inside. Tip: Covering the skillet for the first 10 minutes helps them cook faster.

Add the diced onion and cook 3–4 minutes until softened. Add the sausage back into the pan.

Add diced apple and cook another 3–5 minutes until lightly caramelized and tender.

Season with another pinch of salt, pepper, and cinnamon.

Sprinkle cheddar evenly over the top and place in the oven until cheese is melted.
