Cut your fries the shape you want, skinny, thick, it’s all up to your preference. Try to make them as consistent in size as possible.
Soak in cold water for at least one hour. Dry well.
Heat oil to 250 degrees for the first fry. Place dried potatoes into oil, until they are soft, a fork should go through them easily. Remove from oil and place in freezer for a minimum of 30 minutes, or as far in advance as you’d like.
When you are ready to eat, fry a 2nd time at 250/370 degrees Fahrenheit until golden.
Sprinkle with sea salt to taste.
Pro Tip: Before removing the potatoes from oil, you can add herbs to the oil for flavor.
