Preheat oven to 350°F (180°C).
Wash and dry potatoes, then slice using a mandolin. Transfer to a medium bowl and stir in olive oil and chopped herbs.
Spray a muffin tin with non-stick cooking oil. Layer 8-10 sliced potatoes in 8 of the muffin tin cups.
Place into oven and cook for 30-40 minutes, or until potatoes are golden brown and crispy.
Remove Herbed Potato Stacks from oven and transfer to a serving platter. Serve warm. Enjoy!
