Preheat oven to 400°F and make the honey sriracha glaze.
Wash and dry potatoes, then cut into halves. Transfer to a medium bowl and add 2 Tbsp of olive oil and salt to taste. Toss, ensuring the potatoes are evenly coated. Transfer to a roasting pan and roast for 35 minutes, until crisp and golden.
Remove potatoes from the oven and turn the oven to 450°F. Toss the potatoes with the honey sriracha glaze and transfer back to the roasting pan. Cook for another 10 minutes.
Remove the potatoes from the oven and transfer to a serving dish. Garnish with fresh cilantro and freshly squeezed lime juice.
