Preheat to 400°F
In a large bowl, toss potatoes with olive oil, ranch seasoning, salt, and pepper. Transfer to a roasting pan.
Roast for 25–30 minutes, flipping once, until golden and crispy on the edges.
Whisk Buffalo sauce with melted butter. Pour Buffalo sauce over hot potatoes and toss until evenly coated. Roast for another 5-10 minutes.
Transfer to a serving bowl and top with blue cheese and green onion.
