So simple and easy to prepare, these baked potato chips are baked until crispy as a healthier alternative to classic deep-fried potato chips. Season these vegan, gluten-free, and low in fat potato chips made from EarthFresh Russet Potatoes to your own liking.


  • 12 EarthFresh Russet Potatoes
  • 2 tbsp olive oil
  • 1 tsp salt

Sweet Southern Spice Blend

  • 1 tbsp chili powder
  • 1 tbsp brown sugar
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp cayenne pepper
  • ½ tsp red pepper flakes
  • ½ tsp salt

Smoking Curry Spice Blend

  • 1 tbsp garlic powder
  • 1 tbsp curry powder
  • 1 tbsp turmeric
  • 1 tsp dried coriander
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp dry mustard
  • 1 tsp cayenne pepper

Parmesan and Herb Spice Blend

  • 2 tbsp dehydrated Parmesan cheese
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 1 tbsp garlic powder
  • 1 tbsp onion powder


Preheat oven to 350°F (180°C).

Wash potatoes, then thinly slice using a mandolin. Place the sliced potatoes on a paper towel and allow to dry. Transfer to a large bowl and gently mix with oil and salt.

Place potatoes in a single layer on a baking sheet lined with tin foil, ensuring they do not overlap. Bake for 20-30 minutes, until golden brown and crispy.

To make spice blends: For each spice blend, mix all ingredients in a bowl and set aside.

Remove potatoes from the oven and season each batch of baked potato chips with your favourite spice blend. Enjoy!
