Wash potatoes, then thinly slice using a mandolin. Place the sliced potatoes on a paper towel and allow to dry. Transfer to a large bowl and gently mix with oil and salt.
Place potatoes in a single layer on a baking sheet lined with tin foil, ensuring they do not overlap. Bake for 20-30 minutes, until golden brown and crispy.
To make spice blends: For each spice blend, mix all ingredients in a bowl and set aside.
Remove potatoes from the oven and season each batch of baked potato chips with your favourite spice blend. Enjoy!
