Wash and dry potatoes, then cut into evenly-sized pieces. Place into a large pot of cold, salted water and bring to a boil. Reduce heat and cook potatoes until fork tender. Remove from heat and drain. Working in small batches, press cooked potatoes through a potato ricer into a large bowl. Set aside.
To make caramelized onions: Heat oil and 2 tbsp of butter in a large pan over medium heat. Add sliced onions, sugar and a pinch of salt. Cook, stirring frequently, until onions are golden brown, about 30-40 minutes. Set aside.
Heat cream, garlic, bay leaves and 2 tbsp of butter in a small saucepan over medium heat. When hot, pour into bowl of mashed potatoes, stirring until smooth. Discard the garlic and bay leaf. Stir in caramelized onions, seting aside a small amount for garnish. Crumble goat cheese into the potatoes and stir to combine well.
Season with salt and black pepper to taste and garnish with remaining caramelized onions. Enjoy!
