Preheat oven to 375°F (190°C).
Wash and dry potatoes. Rub lightly with oil and sprinkle with sea salt. Bake for 45-50 minutes.
While potatoes are baking, cook bacon and set aside.
When potatoes are soft, remove from the oven. Carefully cut potatoes lengthwise and sprinkle with salt and pepper. Top with sour cream and crispy bacon strips, and garnish with chopped chives.
Tip: For a healthier baked potato, replace bacon with turkey bacon.
