Preheat oven to 450°F (230°C). Line a large baking sheet with parchment paper and set aside.
Wash potatoes. Place into a pot of cold, salted water and bring to a boil. Cook potatoes until fork tender, about 15 minutes. Remove from heat and drain. Place potatoes onto the baking sheet and lightly press down on each potato with a spatula. Be careful, potatoes will be hot.
Mix the oil, garlic powder, oregano and salt in a bowl. Brush the oil mixture over each the potato and bake for 10 minutes.
Remove the potatoes and transfer to a serving dish. Sprinkle feta cheese over the potatoes and drizzle with honey. Add the fresh parsley and serve. Enjoy!
