Preheat oven to 375°F (190°C).
Cut potatoes into thin strips, leaving the skins on. Add to a pot of cold salted water, bring to a boil and cook for 5 minutes. Remove from heat, drain and set aside.
While potatoes are cooking, mix all remaining ingredients in a large bowl. Add cooked potatoes and gently toss until evenly coated.
Transfer potatoes to a baking sheet lined with parchment paper, ensuring there is no overlap. Bake 45-50 minutes, turning once.
Remove from oven, serve and enjoy!
