This one-pan chili lime chicken and potatoes recipe is a perfect and easy meal to make on a busy night. Simply incorporate all the ingredients into one skillet or pan, mix, and bake for 50-60 minutes. This flavourful recipe will be the new family-favourite as it is delicious and super easy to prepare.   • 1.5 lb EarthFresh Organic Yellow Baby Potatoes
  • 1.5 lb EarthFresh Organic Red Baby Potatoes
  • 1 cup butternut squash, chopped
  • 1 cup chicken broth
  • 4 skinless, boneless chicken breasts, cut into bite-size pieces
  • 1 large white onion, quartered
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tbsp cayenne pepper
  • 1 tbsp smoked paprika
  • 1 tbsp chili powder
  • 1 lime, cut into wedges
  • ½ fresh cilantro, chopped


Preheat oven to 300°F (150°C).

Wash and dry potatoes, then cut into halves. Add cut potatoes, butternut squash, chicken broth, chicken, onions, salt, pepper, garlic powder, cayenne pepper, smoked paprika and chilli powder to a large bowl. Mix well to incorporate all ingredients.

Transfer mixed ingredients to a cast iron skillet, place into the oven and bake for 50-60 minutes.

Remove from oven and garnish with fresh cilantro and lime wedges. Serve from skillet. Be careful, skillet will be hot! Enjoy!
