Preheat oven to 450°F (230°C).
Wash and dry potatoes, then cut into fries. Transfer to large bowl and toss with olive oil and salt. Place fries on a baking sheet lined with parchment paper and bake for 40-50 minutes, until crisp and golden brown. Halfway through, flip the fries.
To make Chimichurri sauce: In a small bowl, whisk together olive oil, red wine vinegar, lemon juice and garlic. Stir in parsley, cilantro and red pepper flakes.
When fries are done, remove from the oven and garnish with Chimichurri sauce.
