These potato power balls will give you the extra boost you need with their high levels of potassium, nutrients, and fibre. This healthy and nutrient-filled recipe made with EarthFresh Polar White Potatoes is the power food you need.

Ingredients

  • 4 EarthFresh Polar White Potatoes
  • 1 ½ cups rolled oats
  • 1 cup natural crunchy peanut butter
  • ½ cup sweetened shredded coconut
  • ½ cup Medjool dates, pitted and coarsely chopped
  • ¼ cup mixed dried fruit blend
  • ¼ cup semi-sweet chocolate chips
  • ½ cup liquid honey
  • 2 tbsp ground chia seeds
  • 2 tbsp ground flax seeds

Directions

Wash and dry potatoes, then cut into small, evenly-sized pieces. Place into a large pot of cold, salted water and bring to a boil. Reduce heat and cook potatoes until fork tender, about 7-10 minutes. Remove from heat and drain. Transfer to a medium bowl and lightly mash. Set aside, allowing to cool completely.

In a large bowl, stir together all remaining ingredients. Add mashed potatoes and continue to stir until well mixed. Transfer mixture to a flat surface and roll into a ball. Cover with plastic wrap and refrigerate for 1 hour.

Remove mixture from refrigerator and roll into balls, about 1 inch in diameter.

Potato Power Balls can be stored in the refrigerator for up to 3 days, in an air-tight container lined with parchment paper. Unused portions can be frozen for up to 3 months. Enjoy!
