Preheat oven to 300°F (150°C).
Wash and dry potatoes. Take half of the potatoes and cut them into halves. Place all the potatoes into a medium bowl and toss with olive oil. Transfer to a baking sheet and carefully place each potato skin-side down. Place into the oven and bake for 15 minutes. Then, turn each potato flesh-side down and roast for an additional 15 minutes. Remove from oven and place on a serving platter.
To make Chimichurri sauce: Mix all remaining ingredients together.
Garnish potatoes with Chimichurri sauce and serve. Enjoy!
