This roasted red pepper & feta mashed potato recipe is vegetarian and gluten-free! High in potassium, a good source of vitamin C, and loaded with fibre, these mashed EarthFresh Yellow Potatoes are full of flavour and are delicious to eat with any meal.

Ingredients

  • 4 EarthFresh Yellow Potatoes
  • 2 red peppers, roasted (see directions)
  • 2 tbsp fresh oregano
  • 2 tbsp butter
  • ¼ cup sour cream
  • ¼ cup feta cheese, crumbled
  • 1 tbsp fresh lemon juice
  • Salt to taste
  • 2 garlic cloves

Directions

Wash and dry potatoes, then cut into evenly-sized pieces. Place into a pot of cold, salted water with garlic cloves and bring to a boil. Reduce heat and cook potatoes until fork tender. Remove from heat and drain. Transfer potatoes to a bowl and lightly mash, adding all ingredients and mixing gently. Serve and enjoy!

To roast peppers: Place peppers on a grill or gas stove on high heat. Roast until all sides are charred, then remove from heat and place in a plastic bag for 20 minutes. The steam will loosen the skins. With the back of a spoon, remove skins. Slice peppers into sections, remove seeds, then dice.
