Wash and dry potatoes, then cut into evenly-sized pieces. Place into a pot of cold, salted water with garlic cloves and bring to a boil. Reduce heat and cook potatoes until fork tender. Remove from heat and drain. Transfer potatoes to a bowl and lightly mash, adding all ingredients and mixing gently. Serve and enjoy!
To roast peppers: Place peppers on a grill or gas stove on high heat. Roast until all sides are charred, then remove from heat and place in a plastic bag for 20 minutes. The steam will loosen the skins. With the back of a spoon, remove skins. Slice peppers into sections, remove seeds, then dice.
