The perfect side dish for any meal, these quick and easy roasted rosemary fingerlings will be a big hit. EarthFresh Fingerling Gourmet Potatoes are key to this tasty meal. High in potassium, great source of vitamin C, low in fat, and loaded with fibre, these fingerlings are easy to prepare and only require 4 ingredients.


  • 1.5 lb EarthFresh Fingerling Gourmet Potatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 tbsp fresh rosemary, chopped


Preheat oven to 350°F (180°C).

Wash and dry potatoes, then cut into halves. Transfer to a medium bowl. Add olive oil, salt and rosemary, then toss to evenly coat the potatoes.

Transfer to a roasting pan and roast in the oven for 30-40 minutes, until crisp and golden brown.

Remove from oven and transfer to a serving platter. Serve warm. Enjoy!
