This recipe is a healthier alternative to traditional creamy potato salads.

Ingredients

  • 6 EarthFresh White Potatoes
  • ½ avocado, chopped (the other half is used for the dressing)
  • 2 tbsp fresh cilantro, chopped

Avocado Dressing

  • ¼ cup Greek yogurt
  • ¼ cup water
  • ½ avocado
  • ½ cup fresh cilantro
  • 1 garlic clove
  • 1 tbsp lemon juice
  • 1/8 tsp sumac
  • 1/8 tsp sea salt

Directions

Wash and dry potatoes, then peel and cut them into small, evenly-sized pieces. Place into a large pot of cold, salted water and bring to a boil. Reduce heat and cook potatoes until fork tender, about 15 minutes. Remove from heat, drain and transfer to a medium bowl. Set aside.

To make avocado dressing: Add all ingredients to a food processor and pulse until well incorporated.

Add dressing to the bowl of potatoes and lightly smash. Garnish with avocado pieces and cilantro.
