So simple and easy to prepare, these baked potato crisps are baked until crispy as a healthier alternative to the classic deep-fried potato chips. Season these vegan, gluten-free, and low-fat potato chips to your own liking.


  • 2 EarthFresh Russet Potatoes
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • Dash of paprika
  • 1 tbsp sour cream (optional)
  • 1 tsp fresh chives, chopped (optional)
  • 1 tsp fresh parsley, minced (optional)


Preheat oven to 400°F (200°C) and lightly brush oil onto 2 baking sheets.

Wash and dry potatoes, then thinly slice using a mandolin. Place in a bowl and toss (or spray) with oil to coat evenly. Season to taste with salt, pepper, garlic powder and onion powder. Sprinkle with paprika for colour.

Transfer potatoes to prepared baking sheets. Bake until crisp and browned, about 20-25 minutes.

Optional: Top with a dollop of sour cream and sprinkle with chives and parsley.
