Preheat oven to 400°F (200°C) and lightly brush oil onto 2 baking sheets.
Wash and dry potatoes, then thinly slice using a mandolin. Place in a bowl and toss (or spray) with oil to coat evenly. Season to taste with salt, pepper, garlic powder and onion powder. Sprinkle with paprika for colour.
Transfer potatoes to prepared baking sheets. Bake until crisp and browned, about 20-25 minutes.
Optional: Top with a dollop of sour cream and sprinkle with chives and parsley.
