Bang Bang Potato Wedges

5 EarthFresh Organic Russet Potatoes

¼ cup olive oil

½ tsp garlic powder

½ tsp pepper

½ tsp salt

Chopped green onion, for garnish

Bang Bang Sauce:

4 Tbsp mayonnaise

3 Tbsp Thai sweet chili sauce

1 Tbsp Sriracha

1 tsp honey

To make the Bang Bang sauce, mix all ingredients together and set aside.


Preheat oven to 380°F (195°C). Line a large baking sheet with parchment paper and set aside.

Wash and dry potatoes. Cut each potato lengthwise into wedges, until there are 6-8 wedges per potato. Place potatoes in a large bowl. Mix the oil, garlic powder, pepper and salt. Pour oil mixture over the potatoes and toss to evenly coat.

Line the potatoes in a single layer onto the baking sheet. Bake for 25 minutes and flip the potatoes. Bake for another 20 minutes, until golden and crisp.

Remove potatoes from the oven and drizzle the Bang Bang sauce over the wedges. Top with chopped green onion and serve. Enjoy!
