Preheat oven to 400°F (200°C).
Add potatoes to a pot of cold, salted water and bring to a boil. Reduce heat and cook until fork tender, about 12-15 minutes. Remove from heat, drain and set aside. When cooled, cut lengthwise.
In a medium bowl, combine mustard, honey, oil, thyme and salt. Gently add the potatoes and mix until well incorporated. Spread potatoes on a baking sheet lined with parchment and sprinkle with breadcrumbs.
Bake until browned and crispy, about 30 minutes. Remove from oven, transfer to a plate and serve warm with your favourite honey mustard dipping sauce.
