Preheat oven to 350°F (180°C).
Wash and dry potatoes, then cut into halves. Lightly brush each potato skin with olive oil and transfer onto a baking sheet lined with parchment paper. Place into the oven and bake for 50 minutes, until fork tender. Remove baked potatoes from the oven and allow to cool for 10 minutes.
Carefully scoop the flesh out of each potato and place into a medium bowl. Stir in pancetta, butter, milk, salt, pepper and cheese. Divide the mixture amongst each potato skin. Place back into the oven and bake for an additional 10 minutes.
Remove from oven, transfer to a serving platter and garnish with chives. Enjoy!
