So simple and easy to make, EarthFresh Russet Potatoes are key for this tasty and nutritious treat. Dress up this potato to your liking- add salsa, guacamole, more vegetables, etc- options are endless.


  • 4 EarthFresh Russet Potatoes
  • 1 tbsp olive oil
  • 4 tbsp low-fat sour cream
  • 4 tbsp cilantro, chopped


Preheat oven to 350°F (180°C).

Wash and dry potatoes, then lightly brush with olive oil. Wrap each potato in tin foil and place directly into oven. Bake for 50 minutes. Remove from the oven and allow to cool for 10 minutes before removing tin foil.

Transfer potatoes to a serving dish. Using a knife, slice each potato down the middle and gently squeeze to open. Add 1 tbsp of sour cream to each one and garnish with cilantro. Enjoy!
